This Low Carb Cabbage Roll Casserole gives you all the comfort of traditional cabbage rolls—without the fuss or the carbs. It’s rich, saucy, and packed with flavor while keeping things keto-friendly.
Ingredients
- Ground beef 1 lb
- Chopped cabbage 1 small head
- Diced onion 1 cup
- Minced garlic 2 cloves
- Tomato sauce 2 cups
- Cauliflower rice 1 cup
- Paprika 1 tsp
- Salt and pepper to taste
- Olive oil 2 tbsp
- Shredded cheese (optional) 1 cup
Instructions
Preheat oven to 375°F (190°C).
In a skillet, cook beef with onion and garlic until browned. Season with paprika, salt, and pepper.
Stir in tomato sauce and cauliflower rice. Simmer for 5 minutes.
In a greased baking dish, layer half the cabbage, then the meat mixture, then the remaining cabbage.
Cover with foil and bake for 45 minutes. Uncover, top with cheese, and bake 10 more minutes.
Let cool slightly before serving.
Notes
- Swap ground beef with ground turkey or pork. You can also add crushed red pepper for a spicy kick.
