Description

Southern Squash Casserole is an easy and delicious comfort food made with yellow squash, cheese, and buttery crackers.


Ingredients

  • 2 pounds yellow squash, sliced
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers (like Ritz)
  • 2 large eggs, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced squash and chopped onion, cooking until the squash is tender, about 8-10 minutes.
  4. Season with salt and pepper. Remove from heat and let cool slightly.
  5. In a large mixing bowl, combine the sour cream, shredded cheddar cheese, crushed crackers, beaten eggs, garlic powder, onion powder, and paprika.
  6. Stir in the cooked squash and onion mixture until well combined.
  7. Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.
  9. Let the casserole cool for about 10 minutes before serving.

Notes

  • For a spicier version, add 1/2 teaspoon of red pepper flakes to the mixture.
  • You can substitute zucchini for half of the yellow squash for a different flavor and texture.
