Southern Squash Casserole is an easy and delicious comfort food made with yellow squash, cheese, and buttery crackers.

- 2 pounds yellow squash, sliced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup crushed buttery crackers (like Ritz)
- 2 large eggs, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
Instructions
- Preheat the oven to 350°F.
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced squash and chopped onion, cooking until the squash is tender, about 8-10 minutes.
- Season with salt and pepper. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the sour cream, shredded cheddar cheese, crushed crackers, beaten eggs, garlic powder, onion powder, and paprika.
- Stir in the cooked squash and onion mixture until well combined.
- Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.
- Let the casserole cool for about 10 minutes before serving.
Notes
- For a spicier version, add 1/2 teaspoon of red pepper flakes to the mixture.
- You can substitute zucchini for half of the yellow squash for a different flavor and texture.
