Description

This creamy Parmesan-crusted chicken is the perfect blend of juicy, tender chicken with a rich, cheesy topping. The combination of Parmesan, garlic, and Italian herbs creates a flavorful, golden crust without the need for breading or frying. With minimal prep time and a simple baking method, this dish is perfect for a quick weeknight meal or an elegant dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 46 oz each)
  • ½ cup mayonnaise (or Greek yogurt for a healthier option)
  • ½ cup grated Parmesan cheese (freshly grated for best flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika (optional, for a smoky touch)
  • 1 teaspoon dried Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • Salt and pepper, to taste
  • Fresh parsley or chives (optional, for garnish)
  • Cooking spray or a small amount of olive oil to grease the baking dish

Instructions

1. Preheat and Prep

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with cooking spray or a small amount of olive oil.

2. Create the Creamy Coating

In a small bowl, mix the mayonnaise (or Greek yogurt), grated Parmesan cheese, garlic powder, onion powder, paprika, and Italian seasoning until well combined.

3. Season the Chicken

Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.

4. Coat the Chicken

Spread the creamy Parmesan mixture evenly over the tops of each chicken breast, making sure to cover them completely.

5. Bake to Perfection

Place the coated chicken breasts in the prepared baking dish and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/75°C).

6. Broil for a Crispy Finish

For a golden-brown crust, turn on the broiler for the last 2-3 minutes of baking. Keep a close eye to prevent burning.

7. Garnish and Serve

Remove from the oven and let the chicken rest for a few minutes. Sprinkle with fresh parsley or chives for a pop of color and added freshness. Serve hot and enjoy!

Notes

  • For a crispier crust, mix a small amount of panko breadcrumbs into the Parmesan mixture.
  • If using thicker chicken breasts, slice them in half lengthwise to ensure even cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven at 350°F (175°C) for best results.
  • Serve with roasted vegetables, mashed potatoes, or a light salad for a complete meal.
