Description

A delicious and easy one-pot meal featuring chicken sausages, zucchini, and tomatoes, perfect for a quick dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken sausages, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium zucchinis, sliced
  • 1 pint cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup low-sodium chicken broth
  • 8 ounces pasta (penne or fusilli)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced chicken sausages and cook until browned, about 5-7 minutes. Remove the sausages and set aside.
  2. In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the sliced zucchinis and halved cherry tomatoes to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
  4. Sprinkle in the oregano, basil, red pepper flakes (if using), salt, and pepper. Stir to combine.
  5. Pour in the chicken broth and bring to a simmer. Add the pasta and stir well. Cover the pot and cook according to the pasta package instructions, usually about 10-12 minutes, until the pasta is al dente.
  6. Once the pasta is cooked, return the browned chicken sausages to the pot and stir to combine. Cook for an additional 2-3 minutes to heat through.
  7. Serve hot, garnished with fresh basil if desired.

  • For a vegetarian option, substitute chicken sausages with plant-based sausage or omit them entirely and add more vegetables.
  • Add a splash of lemon juice or a sprinkle of Parmesan cheese before serving for extra flavor.
