Bright, zesty, and packed with flavor, this Italian Dressing Pasta Salad is your go-to side dish for potlucks, barbecues, or meal prep. It features tender pasta, crisp veggies, and savory salami tossed in a tangy Italian vinaigrette.


Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup mozzarella pearls or diced cheese
  • 1/2 cup sliced black olives
  • 1/2 cup sliced pepperoncini (optional)
  • 1 cup diced salami or pepperoni
  • 3/4 cup Italian dressing (store-bought or homemade)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook pasta according to package directions. Drain and rinse under cold water.

  • In a large bowl, combine the pasta, tomatoes, cucumber, onion, cheese, olives, pepperoncini, and salami.

  • Pour Italian dressing over the mixture and toss to coat evenly.

  • Season with salt and pepper as needed.

  • Chill for at least 30 minutes before serving. Garnish with fresh parsley.
