Ingredients
- 12 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1 cup mozzarella pearls or diced cheese
- 1/2 cup sliced black olives
- 1/2 cup sliced pepperoncini (optional)
- 1 cup diced salami or pepperoni
- 3/4 cup Italian dressing (store-bought or homemade)
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
Cook pasta according to package directions. Drain and rinse under cold water.
In a large bowl, combine the pasta, tomatoes, cucumber, onion, cheese, olives, pepperoncini, and salami.
Pour Italian dressing over the mixture and toss to coat evenly.
Season with salt and pepper as needed.
Chill for at least 30 minutes before serving. Garnish with fresh parsley.
