Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon ground ginger
  • 2 tablespoons minced garlic
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Chopped green onions and sesame seeds for garnish

Instructions

  • Place chicken breasts in the crockpot.

  • In a bowl, whisk together brown sugar, soy sauce, vinegar, ginger, garlic, and red pepper flakes. Pour over chicken.

  • Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.

  • Remove chicken and shred or slice.

  • In a small bowl, mix cornstarch and water, then stir into the sauce. Cook on high for 15 minutes to thicken.

  • Return chicken to crockpot, stir to coat, then serve with rice and garnish.

Notes

  • You can use chicken thighs for a juicier result. Adjust sweetness by reducing brown sugar slightly if preferred. Leftovers are great for meal prep.
