  • 4 boneless, skinless chicken breasts
  • 4 cups fresh spinach, chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 garlic cloves, minced
  • 1 1/2 cups shredded mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil

Instructions

  • Preheat & Prep Chicken: Preheat oven to 375°F (190°C). Carefully slice a pocket into each chicken breast without cutting all the way through.

  • Prepare the Filling: Heat olive oil in a pan over medium heat. Sauté minced garlic for 30 seconds, then add spinach and cook until wilted. Remove from heat.

  • Mix the Filling: In a bowl, combine the cooked spinach, cream cheese, sour cream, shredded mozzarella, salt, black pepper, paprika, and onion powder. Mix well until creamy.

  • Stuff the Chicken: Spoon the filling evenly into each chicken breast pocket. Secure with toothpicks if needed.

  • Sear the Chicken: Heat a bit of olive oil in an oven-safe skillet over medium heat. Sear the stuffed chicken for 2-3 minutes per side until golden brown.

  • Bake to Perfection: Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

  • Rest & Serve: Remove toothpicks, let the chicken rest for a few minutes, then serve warm with your favorite sides.
