Ingredients

  • 2 large sweet potatoes, peeled and thinly sliced (about 1/8 inch thick)
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • Fresh thyme leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the olive oil, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well.
  3. Add the sweet potato slices to the bowl and toss until they are evenly coated with the oil and seasoning mixture.
  4. Stack the sweet potato slices in groups of 4-5 and place them upright on the prepared baking sheet. Repeat until all slices are stacked.
  5. Sprinkle the grated Parmesan cheese generously over the stacked sweet potatoes.
