- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1 cup cooked and crumbled bacon
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and cooked bacon.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, garlic powder, oregano, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss gently until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, give the salad a good stir and garnish with fresh parsley.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced grilled chicken or shrimp for extra protein and flavor.
