Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons melted butter
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
Instructions
Preheat oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of a springform pan. Bake for 10 minutes.
In a large bowl, beat cream cheese until smooth. Add sugar and vanilla. Mix in eggs one at a time.
Stir in sour cream and heavy cream until combined.
Pour over crust and bake for 1 hour or until center is just set.
Turn off oven, crack door, and let cheesecake sit for 1 hour. Chill for at least 4 hours or overnight.
Serve plain or with fruit topping.
