Cowboy Soup is a hearty, flavorful one-pot wonder filled with ground beef, beans, corn, and tomatoes—easy to make and perfect for cozy meals.


Ingredients

  • Ground beef
  • Yellow onion, diced
  • Diced tomatoes
  • Tomato sauce
  • Canned corn, drained
  • Pinto beans, drained and rinsed
  • Black beans, drained and rinsed
  • Beef broth
  • Garlic powder
  • Chili powder
  • Cumin
  • Salt
  • Black pepper

Instructions

  • In a large pot, cook ground beef and diced onion over medium heat until beef is browned.

  • Drain any excess fat.

  • Stir in diced tomatoes, tomato sauce, corn, pinto beans, black beans, and beef broth.

  • Season with garlic powder, chili powder, cumin, salt, and pepper.

  • Simmer uncovered for 20-30 minutes, stirring occasionally.

  • Serve hot with cornbread or tortilla chips.
