A creamy, cheesy comfort food classic that’s the perfect side or main dish. Loaded with tender broccoli and melty cheese, this casserole is quick to assemble and always a crowd favorite.
Ingredients
- 4 cups fresh broccoli florets (or frozen, thawed)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup mayonnaise
- 2 large eggs, beaten
- 1 ½ cups shredded cheddar cheese, divided
- ½ cup chopped onion
- 1 tsp garlic powder
- Salt and pepper to taste
- ½ cup crushed Ritz crackers or breadcrumbs (optional topping)
- 2 tbsp melted butter (for topping)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
Steam or blanch broccoli for 2-3 minutes until just tender, then drain and pat dry.
In a large bowl, combine the cream of mushroom soup, mayonnaise, beaten eggs, 1 cup cheddar cheese, onion, garlic powder, salt, and pepper.
Fold in the broccoli until well coated.
Pour the mixture into the prepared baking dish and spread evenly.
Sprinkle the remaining ½ cup of cheddar cheese on top.
If using, mix the crushed crackers or breadcrumbs with melted butter and sprinkle over the cheese layer.
Bake uncovered for 35-40 minutes, until bubbly and golden on top.
Let rest for 5 minutes before serving.

- ou can use cream of chicken soup instead of mushroom for a milder flavor.
- Add cooked rice or chicken to make it a full meal.
