Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Catalina dressing
- ¼ cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- ½ cup cherry tomatoes, halved (optional)
- 2 green onions, chopped (for garnish)
Instructions
Preheat the Oven – Set your oven to 375°F (190°C).
Prepare the Marinade – In a bowl, mix Catalina dressing, honey, soy sauce, garlic, paprika, black pepper, salt, and red pepper flakes.
Marinate the Chicken – Place chicken breasts in a baking dish and pour the marinade over them. Let it marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
Bake the Chicken – Drizzle olive oil over the chicken and add cherry tomatoes to the dish if using. Bake uncovered for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Baste & Broil – Spoon some of the sauce over the chicken and broil for an additional 2-3 minutes for a caramelized finish.
Garnish & Serve – Sprinkle with chopped green onions and serve hot with your favorite sides.
Notes
- For extra flavor, let the chicken marinate overnight.
- Make it spicier by adding extra red pepper flakes or a dash of hot sauce.
- Use skinless chicken thighs for a juicier texture.
- Leftovers can be stored in the fridge for up to 3 days and reheated easily.
