- 1 pound ground beef
- 1 medium zucchini, diced
- 1 medium sweet potato, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced sweet potato, paprika, oregano, salt, and pepper. Cover the skillet and cook for about 10 minutes, stirring occasionally, until the sweet potato is tender.
- Add the diced zucchini to the skillet, stir well, and cook for another 5 minutes until the zucchini is tender but still crisp.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For added flavor, consider adding a splash of hot sauce or a sprinkle of cheese before serving.
- You can substitute ground turkey or chicken for a leaner option.
- For a vegetarian version, replace the ground beef with black beans or lentils.
