Ingredients
- 1 (10-ounce) package frozen spinach, thawed and well-drained
- 8 ounces cream cheese, softened
- ¼ cup grated Parmesan cheese
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 large egg
- 2 teaspoons soy sauce
- 2 sheets puff pastry, thawed
- 1 tablespoon flour (for dusting)
- 1 additional large egg (for egg wash)
- 3 tablespoons grated Parmesan cheese (for topping)
Instructions
Prepare the Filling
In a medium bowl, mix together the softened cream cheese, Parmesan cheese, onion powder, garlic powder, and black pepper. Add the egg and soy sauce, stirring until smooth. Fold in the well-drained spinach until evenly combined.Roll Out the Puff Pastry
Lightly flour a clean surface and roll out each puff pastry sheet to approximately 12×10 inches. Cut each sheet into 9 equal squares.Assemble the Parcels
Lay each square in a diamond shape. Spoon a line of the spinach mixture from the top to the bottom corner, leaving about half an inch on each side. Brush the right corner with the additional beaten egg, then fold the left corner over the filling, followed by the egg-washed right corner to seal the parcel.Bake to Perfection
Preheat the oven to 400°F (200°C). Arrange the parcels on a parchment-lined baking sheet. Brush the tops with the remaining egg wash and sprinkle with extra Parmesan cheese. Bake for about 18 minutes or until golden brown and puffed.Serve and Enjoy
Allow the pastries to cool for at least 10 minutes before serving. Serve warm for the best flavor and texture.
Notes
- Ensure the spinach is thoroughly drained to prevent soggy pastry.
- For extra crispiness, bake the pastries on a wire rack over the baking sheet.
- To make ahead, prepare the parcels, freeze them on a baking sheet, and store them in an airtight container. Bake straight from frozen, adding a few extra minutes to the cooking time.
- Try swapping cream cheese for ricotta or goat cheese for a different flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in an oven or air fryer for the best results.
