Description

Texas Caviar is a fresh and flavorful dip made with black-eyed peas, corn, and a variety of colorful vegetables, perfect for serving with tortilla chips or as a topping for grilled meats.

Ingredients

Scale
  • 1 can (15 ounces) black-eyed peas, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice

Instructions

  1. In a large mixing bowl, combine the black-eyed peas, corn, red bell pepper, green bell pepper, red onion, jalapeño, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, cumin, salt, black pepper, and lime juice until well combined.
  3. Pour the dressing over the bean and vegetable mixture. Stir gently to combine all ingredients thoroughly.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld. For best results, chill for 4 hours or overnight.
  5. Serve chilled or at room temperature with tortilla chips or as a topping for grilled meats or tacos.

Notes

  • For added flavor, consider adding diced avocado or a splash of hot sauce to the mixture.
  • Substitute black-eyed peas with canned chickpeas for a different texture and taste.
