Description

Tandoori Chicken is a flavorful and aromatic dish made by marinating chicken pieces in a spiced yogurt mixture and then grilling or baking them to perfection.

Ingredients

Scale
  • 2 pounds chicken pieces (legs, thighs, or breasts)
  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons tandoori masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper (adjust for spice preference)
  • 1 teaspoon salt
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a large mixing bowl, combine the yogurt, vegetable oil, lemon juice, garlic, ginger, tandoori masala, cumin, coriander, paprika, turmeric, cayenne pepper, and salt. Mix well to create a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
  3. Preheat your grill or oven to 400°F. If using a grill, oil the grates to prevent sticking.
  4. Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken on the grill or a baking sheet if using the oven.
  5. Grill the chicken for about 20-25 minutes, turning occasionally, until the internal temperature reaches 165°F and the chicken is nicely charred. If baking, cook for 30-35 minutes, flipping halfway through.
  6. Once cooked, remove the chicken from the grill or oven and let it rest for 5 minutes.
  7. Garnish with fresh cilantro and serve with lemon wedges on the side.

Notes

  • For a smoky flavor, add a few drops of liquid smoke to the marinade or use a charcoal grill.
  • Serve with naan or rice and a side of cucumber raita for a complete meal.
