The best of both worlds—Mexican flavor meets pasta perfection! This Taco Pasta Delight is a cheesy, zesty, one-pot wonder filled with seasoned ground beef, tender pasta, and classic taco toppings. It’s quick, comforting, and sure to please the whole family!
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 2 cups beef or chicken broth
- 1 (10 oz) can diced tomatoes with green chilies
- 8 ounces uncooked pasta (rotini, shells, or penne)
- 1/2 cup tomato sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish (optional)
Instructions
Cook the Beef:
In a large skillet or pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.Add Onion & Garlic:
Stir in diced onion and garlic. Cook for 2-3 minutes until soft and fragrant.Season & Simmer:
Add taco seasoning, then stir in broth, diced tomatoes, tomato sauce, and uncooked pasta. Bring to a boil.Cook the Pasta:
Reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and sauce is thickened.Finish Creamy & Cheesy:
Remove from heat and stir in sour cream and cheddar cheese until melted and creamy. Adjust salt and pepper to taste.Serve:
Garnish with fresh cilantro or green onions. Serve hot with tortilla chips or a side salad!

- Swap ground beef with ground turkey or black beans for a lighter version.
