Description

The best of both worlds—Mexican flavor meets pasta perfection! This Taco Pasta Delight is a cheesy, zesty, one-pot wonder filled with seasoned ground beef, tender pasta, and classic taco toppings. It’s quick, comforting, and sure to please the whole family!


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 2 cups beef or chicken broth
  • 1 (10 oz) can diced tomatoes with green chilies
  • 8 ounces uncooked pasta (rotini, shells, or penne)
  • 1/2 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  • Cook the Beef:
    In a large skillet or pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.

  • Add Onion & Garlic:
    Stir in diced onion and garlic. Cook for 2-3 minutes until soft and fragrant.

  • Season & Simmer:
    Add taco seasoning, then stir in broth, diced tomatoes, tomato sauce, and uncooked pasta. Bring to a boil.

  • Cook the Pasta:
    Reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and sauce is thickened.

  • Finish Creamy & Cheesy:
    Remove from heat and stir in sour cream and cheddar cheese until melted and creamy. Adjust salt and pepper to taste.

  • Serve:
    Garnish with fresh cilantro or green onions. Serve hot with tortilla chips or a side salad!

  • Swap ground beef with ground turkey or black beans for a lighter version.
  • Stir in corn or black beans for extra texture and flavor.
