A refreshing salad made with sweet corn, avocado, and cherry tomatoes, perfect for summer.
Ingredients

- 2 cups fresh corn kernels (about 4 ears of corn)
- 1 medium avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the fresh corn kernels, diced avocado, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
- Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
- Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
Notes
- For added crunch, consider mixing in 1/2 cup of diced cucumber or bell pepper.
- If you prefer a spicier kick, add 1 diced jalapeño or a pinch of cayenne pepper to the salad.
