All the flavors of classic stuffed peppers, transformed into an easy, deconstructed casserole. With ground beef, rice, peppers, and melty cheese, it’s a satisfying and weeknight-friendly dish.


Ingredients

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 3 bell peppers (any color), chopped
  • 2 cups cooked rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (8 oz) tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 ½ cups shredded mozzarella or cheddar cheese, divided

Instructions

  • Preheat oven to 375°F (190°C).

  • In a large skillet, cook ground beef with onion and bell peppers until beef is browned. Drain grease.

  • Stir in cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.

  • Mix in 1 cup of cheese, then pour mixture into a greased 9×13 baking dish.

  • Sprinkle remaining cheese on top.

  • Bake for 25-30 minutes until cheese is melted and bubbly.

  • Let cool slightly before serving.

Notes

  • You can use cauliflower rice for a low-carb version.
  • Make it spicy by adding red pepper flakes or chopped jalapeños.
