Ingredients

    • 2 ribeye or sirloin steaks
    • Salt and pepper, to taste
    • 1 tablespoon olive oil
    • 2 tablespoons butter
    • 2 garlic cloves, smashed
    • Fresh thyme or rosemary (optional)
    • 1 lb russet potatoes, cut into fries
    • 2 tablespoons vegetable oil (for fries)

Instructions

  • Preheat oven to 425°F. Toss fries with oil, salt, and pepper. Bake for 25–30 minutes until crispy.

  • Season steak generously with salt and pepper.

  • Heat olive oil in skillet over medium-high. Sear steak 3–4 minutes per side.

  • Add butter, garlic, and herbs. Baste steaks for 1–2 minutes.

  • Rest steak 5 minutes. Serve with fries.

  • Use a meat thermometer for perfect doneness.
  • You can air-fry the fries instead of baking.
