Ingredients
- 1 lb (450g) boneless, skinless chicken breasts or thighs
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño, thinly sliced (remove seeds for less heat)
- 1 cup fresh or canned peaches, diced
- 2 table spoons honey
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- ½ teaspoon red pepper flakes (optional)
- ¼ cup chicken broth or water
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
- 1 tablespoon butter (for extra richness)
- 2 green onions, chopped (for garnish)
Instructions
Season the Chicken – Sprinkle chicken with salt, black pepper, and paprika.
Sear the Chicken – Heat olive oil in a pan over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
Make the Sauce – In the same pan, sauté onion, garlic, and jalapeño until fragrant. Add peaches, honey, soy sauce, apple cider vinegar, red pepper flakes, and chicken broth. Simmer for 3-4 minutes.
Thicken the Sauce – Stir in the cornstarch slurry and butter, then cook until the sauce thickens slightly.
Combine & Serve – Return the chicken to the pan, coating it in the sauce. Let it cook for another 2-3 minutes until fully glazed. Garnish with green onions and serve hot.
Notes
- Adjust the spice level by adding more or less jalapeño and red pepper flakes.
- Use fresh or frozen peaches for the best flavor, but canned peaches work too.
- For extra depth, add a splash of bourbon or whiskey to the sauce.
- Pairs well with rice, mashed potatoes, or roasted veggies.
