Description

Spicy Chicken Bhuna is a flavorful and aromatic dish made with tender chicken thighs cooked in a rich blend of spices and tomatoes.


Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green chilies, slit lengthwise (adjust for spice level)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder (adjust for spice level)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup chicken broth
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.
  2. Add the chopped onion and cook until golden brown, about 8-10 minutes. Stir occasionally to prevent burning.
  3. Stir in the minced garlic, grated ginger, and green chilies. Sauté for another 2-3 minutes until fragrant.
  4. Add the coriander powder, turmeric powder, garam masala, and red chili powder. Cook for 1-2 minutes, stirring constantly to toast the spices.
  5. Add the chicken pieces to the skillet, stirring well to coat them with the spice mixture. Cook for about 5-7 minutes until the chicken is browned on all sides.
  6. Pour in the drained diced tomatoes and chicken broth. Stir to combine, then bring to a simmer.
  7. Reduce the heat to low, cover, and let it cook for 25-30 minutes, stirring occasionally, until the chicken is cooked through and tender.
  8. Season with salt to taste and garnish with fresh cilantro before serving.

Notes

  • For a creamier texture, stir in 1/2 cup of coconut milk during the last 10 minutes of cooking.
  • To add more vegetables, consider adding bell peppers or spinach during the last 10 minutes of cooking for added nutrition and flavor.
