These Slow Cooker Queso Chicken Tacos are creamy, cheesy, and packed with bold Tex-Mex flavor. Perfect for busy weeknights, just set it and forget it!


Ingredients

  • 1 ½ pounds boneless skinless chicken breasts
  • 1 packet taco seasoning
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 cup jarred queso or cheese dip
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • Small flour or corn tortillas
  • Toppings: shredded lettuce, diced tomatoes, sour cream, shredded cheese

Instructions

  • Place the chicken breasts in the slow cooker. Sprinkle with taco seasoning, garlic powder, and cumin.
  • Pour the diced tomatoes with green chilies over the top, then spoon the queso evenly across the chicken.
  • Cover and cook on low for 6 hours or high for 3–4 hours, until chicken is tender and easy to shred.
  • Shred the chicken with two forks and mix well with the sauce in the cooker.
  • Serve in warmed tortillas and top with your favorite taco toppings.
