- 2 tablespoons oil
- 1/2 lb shrimp, peeled and deveined
- 2 eggs, beaten
- 3 cups cooked rice
- 1/2 cup peas and carrots, frozen
- 1/4 cup green onions, sliced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
Heat 1 tablespoon oil in a skillet and cook shrimp until pink. Remove and set aside.
Add remaining oil and scramble eggs.
Stir in rice, vegetables, and shrimp.
Add soy sauce, sesame oil, and green onions. Stir until heated through and well mixed.
Serve hot.
Notes
Use day-old rice for the best texture.Add garlic or ginger for extra flavor.
