This Scallion Chicken is a simple yet flavorful dish that features tender chicken stir-fried with aromatic scallions in a savory sauce. The combination of soy sauce, garlic, and ginger enhances the taste, making it a perfect quick and easy meal. Serve it over steamed rice or noodles for a delicious dinner!
Ingredients
- 1 lb (450g) boneless, skinless chicken breast or thighs, cut into thin strips
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 4–5 scallions, cut into 2-inch pieces
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- ½ teaspoon black pepper
- ¼ cup chicken broth or water
- 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
- Sesame seeds (for garnish)
Instructions
Prepare the Chicken – Toss the chicken with cornstarch until evenly coated.
Sear the Chicken – Heat vegetable oil in a pan over medium-high heat. Cook the chicken for 4-5 minutes until golden brown and fully cooked. Remove and set aside.
Sauté the Aromatics – In the same pan, add a little more oil if needed and sauté garlic, ginger, and scallions for about 30 seconds until fragrant.
Make the Sauce – Stir in soy sauce, oyster sauce, sugar, sesame oil, black pepper, and chicken broth. Let it simmer for 2 minutes.
Thicken the Sauce – Stir in the cornstarch slurry and cook until the sauce slightly thickens.
Combine & Serve – Return the cooked chicken to the pan and toss it in the sauce. Serve hot, garnished with sesame seeds.
Notes
- For extra flavor, marinate the chicken in a little soy sauce and cornstarch for 10 minutes before cooking.
- Adjust the saltiness by using low-sodium soy sauce if needed.
- For a spicier version, add red pepper flakes or a drizzle of chili oil
- Best served fresh, but leftovers can be stored in the fridge for up to 3 days.
