Ingredients
- 3–4 lb chuck roast
- 1 tbsp olive oil
- Salt and pepper to taste
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and cut into chunks
- 1 onion, quartered
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
Season the roast generously with salt and pepper.
In a skillet, heat olive oil over medium-high and sear the roast on all sides until browned.
Place roast in the slow cooker. Add carrots, potatoes, onion, and garlic.
Pour in beef broth and Worcestershire sauce, then sprinkle thyme and rosemary over the top.
Cover and cook on low for 8–9 hours or on high for 4–5 hours until meat is tender.
Slice and serve with vegetables and spoonfuls of the broth.
