This Easy Crock Pot Pot Roast is the definition of comfort food—tender beef, hearty vegetables, and a savory broth, all slow-cooked to melt-in-your-mouth perfection. It’s a one-pot meal that tastes like home.


Ingredients

  • 34 lb chuck roast
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 1 onion, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

    • Season the roast generously with salt and pepper.

    • In a skillet, heat olive oil over medium-high and sear the roast on all sides until browned.

    • Place roast in the slow cooker. Add carrots, potatoes, onion, and garlic.

    • Pour in beef broth and Worcestershire sauce, then sprinkle thyme and rosemary over the top.

    • Cover and cook on low for 8–9 hours or on high for 4–5 hours until meat is tender.

    • Slice and serve with vegetables and spoonfuls of the broth.
