These juicy crockpot chicken thighs are packed with flavor, thanks to a savory garlic-herb seasoning and a slow simmer that makes them tender and mouthwatering with minimal effort.
Ingredients
- 6 bone-in, skin-on chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup chicken broth
- Fresh parsley, for garnish
Instructions
In a small bowl, mix garlic powder, onion powder, paprika, thyme, salt, and pepper.
Rub seasoning blend all over the chicken thighs.
Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 3–4 minutes until golden brown.
Transfer chicken to the crockpot. Pour in chicken broth around the sides.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.
Garnish with fresh parsley before serving.

- You can skip searing for a more hands-off approach, but browning adds flavor and crispness. For extra moisture, add sliced onions or lemon wedges under the chicken. This pairs well with mashed potatoes or roasted veggies.
