Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • Fresh parsley, for garnish

Instructions

  • In a small bowl, mix garlic powder, onion powder, paprika, thyme, salt, and pepper.

  • Rub seasoning blend all over the chicken thighs.

  • Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 3–4 minutes until golden brown.

  • Transfer chicken to the crockpot. Pour in chicken broth around the sides.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.

  • Garnish with fresh parsley before serving.

Notes

  • You can skip searing for a more hands-off approach, but browning adds flavor and crispness. For extra moisture, add sliced onions or lemon wedges under the chicken. This pairs well with mashed potatoes or roasted veggies.
