Description

Simple, nourishing, and full of flavor, this Vegan Cabbage and Rice dish is budget-friendly and completely satisfying. It’s a one-pot wonder that’s perfect for a cozy meatless meal.


Ingredients

Scale
  • Green cabbage, shredded 4 cups
  • Cooked rice 2 cups
  • Diced tomatoes (with juices) 1 can (14 oz)
  • Chopped onion 1
  • Minced garlic 2 cloves
  • Paprika 1 tsp
  • Olive oil 2 tbsp
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

    • Heat oil in a large skillet or pot over medium heat. Add onion and garlic, cook until soft.

    • Add cabbage, stir and cook for 10 minutes until softened.

    • Stir in diced tomatoes, paprika, salt, and pepper. Simmer for 10 more minutes.

    • Add cooked rice, stir well, and cook until heated through.

    • Garnish with parsley and serve warm.
