Ingredients

  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons olive oil

  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted walnuts, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil (for vinaigrette)
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Place the trimmed asparagus on a baking sheet. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and black pepper. Toss to coat evenly.
  3. Roast the asparagus in the preheated oven for 15-20 minutes, or until tender and slightly crispy. Remove from the oven and let cool slightly.
