Description

Ingredients
- all-purpose flour
- baking soda
- salt
- ground cinnamon
- buttermilk
- vegetable oil
- egg
- vanilla extract
- granulated sugar
- chopped rhubarb
- chopped nuts (optional)
Instructions
Preheat oven to 350°F and grease a loaf pan.
In a bowl, whisk flour, baking soda, salt, and cinnamon.
In another bowl, beat buttermilk, oil, egg, vanilla, and sugar until combined.
Stir in dry ingredients, then fold in rhubarb and nuts if using.
Pour batter into pan and bake for 50–60 minutes.
