Ingredients

Scale

Main Ingredients:

  • 1 lb (450g) ground beef or ground turkey
  • 1 packet (1 oz) taco seasoning
  • ½ cup water
  • 2 cups cooked white or brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 cups crushed Nacho Cheese Doritos
  • ½ cup salsa
  • ½ cup sour cream

Optional Toppings:

    • Diced tomatoes
    • Shredded lettuce
    • Diced avocado or guacamole
    • Sliced green onions
    • Pickled jalapeños
    • Fresh cilantro (for garnish)

Instructions

Step 1: Cook the Ground Beef or Turkey

  1. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.
  2. Add the taco seasoning and ½ cup of water to the skillet, stirring to combine.
  3. Let the mixture simmer for 5 minutes until the seasoning thickens and coats the meat.

Step 2: Prepare the Base of the Bowls

  1. Divide the cooked rice evenly between four serving bowls.
  2. Add a generous portion of the taco-seasoned ground beef on top of the rice.

Step 3: Add the Layers

  1. Top the beef with black beans, corn, and shredded cheese.
  2. Sprinkle each bowl with a handful of crushed Doritos.

Step 4: Add Toppings and Serve

    1. Finish each bowl with a spoonful of salsa and a dollop of sour cream.
    2. Add any optional toppings you like, such as diced tomatoes, shredded lettuce, or sliced avocado.
    3. Garnish with fresh cilantro, if desired, and serve immediately.

Notes

  • Rice Options: Use white rice, brown rice, or even cauliflower rice for a low-carb alternative.
  • Vegetarian Option: Skip the meat and double up on black beans or add roasted veggies like bell peppers and zucchini.
  • Spice Level: Use mild, medium, or spicy taco seasoning and salsa depending on your preference. Add hot sauce for extra heat!
  • Make Ahead: Cook the meat and rice ahead of time and store them in the refrigerator. Reheat and assemble the bowls when ready to serve.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Add fresh Doritos just before serving to maintain their crunch.
