Step 2: Prepare the Base of the Bowls
- Divide the cooked rice evenly between four serving bowls.
- Add a generous portion of the taco-seasoned ground beef on top of the rice.
Step 3: Add the Layers
- Top the beef with black beans, corn, and shredded cheese.
- Sprinkle each bowl with a handful of crushed Doritos.
Step 4: Add Toppings and Serve
- Finish each bowl with a spoonful of salsa and a dollop of sour cream.
- Add any optional toppings you like, such as diced tomatoes, shredded lettuce, or sliced avocado.
- Garnish with fresh cilantro, if desired, and serve immediately.
Notes
- Rice Options: Use white rice, brown rice, or even cauliflower rice for a low-carb alternative.
- Vegetarian Option: Skip the meat and double up on black beans or add roasted veggies like bell peppers and zucchini.
- Spice Level: Use mild, medium, or spicy taco seasoning and salsa depending on your preference. Add hot sauce for extra heat!
- Make Ahead: Cook the meat and rice ahead of time and store them in the refrigerator. Reheat and assemble the bowls when ready to serve.
