Description

This Fresh Mediterranean Pasta Salad is a vibrant and refreshing dish packed with crisp veggies, tangy olives, and creamy feta, all tossed in a zesty homemade dressing. Perfect for potlucks, picnics, or a light lunch, it’s a Mediterranean flavor explosion in every bite.


Ingredients

    • Pasta (penne, rotini, or bowtie)
    • Cherry tomatoes
    • Cucumber
    • Red onion
    • Kalamata olives
    • Feta cheese
    • Fresh parsley
    • Olive oil
    • Red wine vinegar
    • Dijon mustard
    • Garlic
    • Dried oregano
    • Salt and pepper

 


Instructions

    • Cook pasta until al dente, drain, and rinse with cold water.
    • Prepare dressing by whisking olive oil, vinegar, mustard, garlic, oregano, salt, and pepper.
    • Combine cooked pasta with veggies, olives, and parsley. Toss with dressing and fold in feta cheese.
    • Chill before serving.
