- 2 lbs smoked sausage, sliced into bite-sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 (12 oz) can diced tomatoes
- 1/2 cup heavy cream
- 1/4 teaspoon black pepper
- 8 oz dry whole wheat bow tie pasta
- 2 cups shredded cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, add the chopped onion and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for another 30 seconds.
- Pour in the chicken broth and diced tomatoes (including the juices). Stir well to combine.
- Add the uncooked pasta, bring to a boil, then reduce the heat to low. Cover and let simmer for 12-15 minutes, or until the pasta is tender.
- Stir in the heavy cream and black pepper. Return the cooked sausage to the skillet and mix everything together.
- Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for about 2 minutes.
- Stir gently to combine, then serve warm. Enjoy!
