Ingredients

  • 3 tablespoons olive oil
  • 2 lbs smoked sausage, sliced into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 (12 oz) can diced tomatoes
  • 1/2 cup heavy cream
  • 1/4 teaspoon black pepper
  • 8 oz dry whole wheat bow tie pasta
  • 2 cups shredded cheddar cheese

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove and set aside.
  • In the same skillet, add the chopped onion and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for another 30 seconds.
  • Pour in the chicken broth and diced tomatoes (including the juices). Stir well to combine.
  • Add the uncooked pasta, bring to a boil, then reduce the heat to low. Cover and let simmer for 12-15 minutes, or until the pasta is tender.
  • Stir in the heavy cream and black pepper. Return the cooked sausage to the skillet and mix everything together.
  • Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for about 2 minutes.
  • Stir gently to combine, then serve warm. Enjoy!

Notes

  • For extra flavor, add red pepper flakes or a pinch of cayenne pepper.
