Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 lb potato gnocchi
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried Italian herbs
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Sear the Chicken – Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, and dried Italian herbs. Cook for 6-8 minutes until golden brown and fully cooked. Remove from the skillet and set aside.
- Sauté the Garlic – In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
- Deglaze & Cook Gnocchi – Pour in the chicken broth, scraping up any browned bits from the pan for extra flavor. Add the gnocchi, bring to a simmer, and cook for 3-4 minutes, stirring occasionally, until the gnocchi softens.
- Make the Creamy Sauce – Reduce heat to medium-low and pour in the heavy cream. Stir gently and let it simmer for another 2-3 minutes until the sauce starts to thicken.
- Combine & Finish – Return the cooked chicken to the skillet and stir in the grated Parmesan cheese. Stir until the cheese melts and the sauce is smooth and creamy.
- Taste & Serve – Adjust seasoning with additional salt and pepper if needed. Garnish with fresh basil and serve immediately
Notes
- For a lighter version – Use half-and-half or whole milk instead of heavy cream.
- For extra flavor – Add a splash of white wine when deglazing the pan.
- For a spicy kick – Sprinkle red pepper flakes into the sauce.
- Vegetable boost – Stir in spinach, cherry tomatoes, or mushrooms.
- Gluten-free option – Use gluten-free gnocchi available in most stores.
