Description
Potato Lollipops are a fun and delicious snack made from mashed potatoes, cheese, and spices, shaped into balls and fried until golden brown.

- 2 cups mashed potatoes (about 3 medium potatoes)
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 large egg
- Vegetable oil for frying
- Lollipop sticks or skewers
Instructions
- In a large bowl, combine the mashed potatoes, cheddar cheese, green onions, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
- Shape the mixture into small balls, about 1 inch in diameter. Insert a lollipop stick or skewer into each ball, pressing gently to secure.
- In a shallow bowl, beat the egg. Place the breadcrumbs in another shallow bowl. Dip each potato ball in the beaten egg, then roll it in the breadcrumbs until fully coated.
- In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once the oil is hot, carefully add the potato lollipops in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- For a spicy kick, add 1/4 teaspoon of cayenne pepper to the potato mixture.
- You can bake the lollipops instead of frying them. Preheat the oven to 400°F, place the lollipops on a baking sheet lined with parchment paper, and bake for 20-25 minutes or until golden brown.
