Description

Potato Lollipops are a fun and delicious snack made from mashed potatoes, cheese, and spices, shaped into balls and fried until golden brown.


Ingredients

  • 2 cups mashed potatoes (about 3 medium potatoes)
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 large egg
  • Vegetable oil for frying
  • Lollipop sticks or skewers

Instructions

  1. In a large bowl, combine the mashed potatoes, cheddar cheese, green onions, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
  2. Shape the mixture into small balls, about 1 inch in diameter. Insert a lollipop stick or skewer into each ball, pressing gently to secure.
  3. In a shallow bowl, beat the egg. Place the breadcrumbs in another shallow bowl. Dip each potato ball in the beaten egg, then roll it in the breadcrumbs until fully coated.
  4. In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once the oil is hot, carefully add the potato lollipops in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  5. Serve warm with your favorite dipping sauce.

Notes

  • For a spicy kick, add 1/4 teaspoon of cayenne pepper to the potato mixture.
  • You can bake the lollipops instead of frying them. Preheat the oven to 400°F, place the lollipops on a baking sheet lined with parchment paper, and bake for 20-25 minutes or until golden brown.
