A refreshing summer drink made with strawberries and coconut milk, perfect for hot days.
Ingredients

- 2 cups fresh strawberries, hulled and sliced
- 1 cup coconut milk (canned or carton)
- 1 cup sparkling water
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- Ice cubes
- Fresh mint leaves for garnish (optional)
Instructions
- In a blender, combine the sliced strawberries, coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth.
- Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
- Fill glasses with ice cubes and pour the strawberry coconut mixture over the ice, filling each glass about two-thirds full.
- Top each glass with sparkling water, stirring gently to combine.
- Garnish with fresh mint leaves if desired and serve immediately.
Notes
- For a creamier texture, use full-fat coconut milk.
- You can substitute the strawberries with other berries like raspberries or blueberries for a different flavor.
