Description

This Easter Poke Cake is a festive, colorful, and incredibly moist dessert that will brighten up any Easter celebration. Made with a marbled pastel cake, a creamy pudding filling, and a fluffy whipped topping, every bite is a perfect mix of sweet, light, and delicious flavors. Easy to prepare and fun to decorate, this cake is a must-have for spring gatherings!

Ingredients

Scale

For the Cake:

  • 1 box white cake mix (plus ingredients as per package instructions)
  • Gel food coloring in pastel shades

For the Filling:

  • 2 boxes instant vanilla pudding mix
  • 4 cups cold milk

For the Topping:

    • 1 container whipped topping, thawed
    • Easter-themed sprinkles (optional)

Instructions

  • Prepare the Cake Batter: Mix the white cake batter according to package instructions. Divide into separate bowls and add different pastel food colorings.
  • Create a Marbled Effect: Pour the colored batters into a greased cake pan, gently swirling them together for a beautiful pastel pattern.
  • Bake & Cool: Bake according to package instructions. Allow to cool slightly.
  • Poke Holes: Use the handle of a wooden spoon to poke evenly spaced holes across the cake.
  • Prepare the Pudding: Whisk together instant vanilla pudding mix and cold milk until thickened.
  • Fill the Cake: Pour the pudding over the cake, making sure it seeps into the holes. Smooth the top.
  • Chill & Set: Refrigerate for at least 2 hours to allow the pudding to fully set.
  • Top & Decorate: Spread the whipped topping over the cake and sprinkle with Easter-themed decorations.
  • Serve & Enjoy: Slice and serve chilled for the best texture and flavor!

Notes

  • For extra flavor, swap vanilla pudding for lemon or white chocolate pudding.
  • Use a toothpick or skewer if you don’t have a wooden spoon to poke holes.
  • Refrigerate leftovers in an airtight container for up to 4 days.
  • For a fun twist, use chocolate cake mix instead of white for a chocolate Easter poke cake.
