This delicious spinach tomato pasta is a quick and healthy meal packed with fresh spinach, juicy tomatoes, and your favorite pasta tossed in a light garlic olive oil sauce. Perfect for busy weeknights or a wholesome lunch!
Ingredients
- 8 oz pasta of choice
- 2 cups fresh spinach
- 1 ½ cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
Cook the pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
Add cherry tomatoes and cook for 3–4 minutes until softened.
Stir in spinach and cook until wilted.
Add cooked pasta to the skillet and toss to combine. Season with salt, pepper, and red pepper flakes.
Serve warm with grated Parmesan.
