Description

This vegetarian pasta dish is light, zesty, and comes together in under 30 minutes. The combo of spinach, tomatoes, and garlic is always a winner.


Ingredients

Scale
  • 8 oz spaghetti or linguine
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 3 cups fresh baby spinach
  • Salt and pepper, to taste
  • Grated parmesan, for topping

Instructions

  • Cook pasta until al dente. Reserve ½ cup pasta water, then drain.

  • In a skillet, heat olive oil and sauté garlic for 1 minute.

  • Add tomatoes and cook until soft.

  • Stir in spinach and cook until wilted.

  • Add pasta and reserved water. Toss well and season.

  • Serve with parmesan on top.

Notes

  • Add chili flakes or lemon zest for extra zing.
