Ingredients
- 4 salmon fillets (about 6 oz each)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 1/4 cups low-sodium chicken broth
- 1/2 cup heavy cream
- Zest and juice of 1 lemon
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh dill or parsley (plus more for garnish)
- Lemon slices, for garnish (optional)
Instructions
Sear the Salmon: Season salmon with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear salmon skin-side down for 4-5 minutes, flip, cook another 2-3 minutes until golden and cooked through. Remove and set aside.
Sauté Orzo Base: In the same skillet, melt butter. Add garlic and orzo. Cook for 1-2 minutes until lightly toasted.
Cook the Orzo: Pour in the chicken broth and bring to a simmer. Cook for about 8-10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
Add Cream & Flavor: Stir in heavy cream, lemon zest, lemon juice, Parmesan, and fresh herbs. Mix until creamy and well combined.
Finish & Serve: Return salmon to the skillet and let sit for a couple of minutes to warm through. Garnish with extra herbs and lemon slices. Serve immediately.
Notes
- You can use half-and-half instead of heavy cream for a lighter version.
- Add spinach or cherry tomatoes to the orzo for extra color and nutrients.
- If the orzo gets too thick, just stir in a splash of warm broth or water.
- Pairs well with a crisp green salad or steamed asparagus.
