Monterey Chicken Spaghetti is a delicious and comforting dish that combines tender chicken, spaghetti, and a flavorful barbecue sauce, topped with melted Monterey Jack cheese.

- 2 cups cooked spaghetti
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup barbecue sauce
- 1 cup shredded Monterey Jack cheese
- 1 cup diced tomatoes (fresh or canned)
- ½ cup chopped green onions
- ½ cup sliced black olives (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, salt, and black pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
- In a large mixing bowl, combine the cooked spaghetti, cooked chicken, barbecue sauce, diced tomatoes, and half of the green onions. Mix well to combine all ingredients.
- Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded Monterey Jack cheese evenly over the top.
- If using, scatter the sliced black olives over the cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with the remaining green onions.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the chicken mixture.
- Substitute the Monterey Jack cheese with cheddar or pepper jack for a different flavor profile.
