This Mexican-inspired pasta salad brings the flavors of elote—grilled corn, lime, chili, and cotija cheese—into a creamy and tangy bowl.


Ingredients

  • 3 cups cooked pasta (elbow or rotini)
  • 1 1/2 cups corn (grilled or canned)
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/3 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro

Instructions

  • Combine mayo, sour cream, lime juice, chili powder, salt, and pepper in a bowl.

  • In a larger bowl, add pasta, corn, and cotija cheese.

  • Pour dressing over the salad and toss to combine.

  • Mix in cilantro and chill before serving.

Notes

  • Add jalapeños for extra heat.
  • Grilled corn gives a smoky flavor, but canned corn works too.
