Description
This Mexican-inspired pasta salad brings the flavors of elote—grilled corn, lime, chili, and cotija cheese—into a creamy and tangy bowl.
Ingredients

- 3 cups cooked pasta (elbow or rotini)
- 1 1/2 cups corn (grilled or canned)
- 1/3 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/3 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
Instructions
Combine mayo, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
In a larger bowl, add pasta, corn, and cotija cheese.
Pour dressing over the salad and toss to combine.
Mix in cilantro and chill before serving.
Notes
- Add jalapeños for extra heat.
- Grilled corn gives a smoky flavor, but canned corn works too.
