Ingredients
- cooked rotini pasta
- black beans, drained and rinsed
- corn kernels (fresh, canned, or frozen)
- cherry tomatoes, halved
- diced red onion
- diced red bell pepper
- chopped fresh cilantro
- crumbled cotija or feta cheese
- lime juice
- olive oil
- taco seasoning
- salt and pepper to taste
Instructions
Cook pasta according to package directions. Rinse with cold water and drain.
In a large bowl, combine pasta, beans, corn, tomatoes, onion, bell pepper, and cilantro.
In a small bowl, whisk together lime juice, olive oil, taco seasoning, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Top with crumbled cheese before serving.
