Description

A zesty, colorful side dish packed with Southwest flavors! This Mexican Pasta Salad is perfect for potlucks, BBQs, or as a vibrant lunch option.


Ingredients

  • cooked rotini pasta
  • black beans, drained and rinsed
  • corn kernels (fresh, canned, or frozen)
  • cherry tomatoes, halved
  • diced red onion
  • diced red bell pepper
  • chopped fresh cilantro
  • crumbled cotija or feta cheese
  • lime juice
  • olive oil
  • taco seasoning
  • salt and pepper to taste

Instructions

  • Cook pasta according to package directions. Rinse with cold water and drain.

  • In a large bowl, combine pasta, beans, corn, tomatoes, onion, bell pepper, and cilantro.

  • In a small bowl, whisk together lime juice, olive oil, taco seasoning, salt, and pepper.

  • Pour the dressing over the salad and toss to combine.

  • Top with crumbled cheese before serving.
