- 2 large sweet potatoes (about 1.5 pounds)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and sliced
- 2 tablespoons fresh parsley, chopped
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Wash and scrub the sweet potatoes, then pierce them several times with a fork. Place them on the prepared baking sheet and bake for 45-60 minutes, or until tender.
- While the sweet potatoes are baking, in a small bowl, mix together the olive oil, garlic powder, smoked paprika, oregano, salt, and black pepper.
- In a separate bowl, combine the halved cherry tomatoes, feta cheese, Kalamata olives, parsley, and lemon juice. Drizzle with a little olive oil and toss gently to combine.
- Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and gently fluff the insides with a fork.
- Top each sweet potato half with the Mediterranean mixture, dividing it evenly among them. Serve warm.
