Orzo Pasta Salad is a fresh and tangy Mediterranean-inspired dish featuring tender orzo, crisp vegetables, feta cheese, and a zesty lemon vinaigrette.
Ingredients

- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup kalamata olives, sliced
- 1/3 cup feta cheese, crumbled
- 2 tablespoons chopped parsley
Lemon Dressing
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
Cook orzo according to package directions. Drain and cool.
In a large bowl, combine orzo, tomatoes, cucumber, onion, olives, feta, and parsley.
Whisk together dressing and pour over salad. Toss to combine and chill before serving.
