Description

Orzo Pasta Salad is a fresh and tangy Mediterranean-inspired dish featuring tender orzo, crisp vegetables, feta cheese, and a zesty lemon vinaigrette.


Ingredients

Scale
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup kalamata olives, sliced
  • 1/3 cup feta cheese, crumbled
  • 2 tablespoons chopped parsley

Lemon Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

    • Cook orzo according to package directions. Drain and cool.

    • In a large bowl, combine orzo, tomatoes, cucumber, onion, olives, feta, and parsley.

    • Whisk together dressing and pour over salad. Toss to combine and chill before serving.
