- 1 cup Israeli couscous
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- In a saucepan, heat olive oil over medium heat.
- Add diced onion and bell pepper, sauté until softened.
- Stir in Israeli couscous and toast for 2-3 minutes.
- Add vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 10-12 minutes until couscous is tender.
- Remove from heat and let it sit for 5 minutes.
- Fluff couscous with a fork and mix in cherry tomatoes, cucumber, parsley, and feta cheese.
- Season with salt and pepper to taste.
Notes
- For a vegan option, omit feta cheese.
- This dish can be served warm or cold.
