  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat olive oil over medium heat.
  2. Add diced onion and bell pepper, sauté until softened.
  3. Stir in Israeli couscous and toast for 2-3 minutes.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 10-12 minutes until couscous is tender.
  6. Remove from heat and let it sit for 5 minutes.
  7. Fluff couscous with a fork and mix in cherry tomatoes, cucumber, parsley, and feta cheese.
  8. Season with salt and pepper to taste.
