- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, olives, and parsley.
In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
Pour the dressing over the salad and toss well.
Chill for at least 15 minutes before serving to allow flavors to blend.
