Ingredients
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- ½ teaspoon vanilla extract
- 1½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup powdered sugar (for rolling)
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, cream butter and sugar until fluffy. Add egg, lemon zest, juice, and vanilla.
Mix in flour, baking powder, and salt until a soft dough forms.
Chill dough for 20–30 minutes.
Scoop dough, roll into balls, and coat in powdered sugar.
Place on baking sheet and bake for 10–12 minutes.
Let cool on the pan for a few minutes before transferring.
