Ingredients

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup powdered sugar (for rolling)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • In a bowl, cream butter and sugar until fluffy. Add egg, lemon zest, juice, and vanilla.

  • Mix in flour, baking powder, and salt until a soft dough forms.

  • Chill dough for 20–30 minutes.

  • Scoop dough, roll into balls, and coat in powdered sugar.

  • Place on baking sheet and bake for 10–12 minutes.

  • Let cool on the pan for a few minutes before transferring.
