Description
A spicy, comforting Caribbean classic made with tender chicken, aromatic spices, and rich curry sauce — perfect over rice or with warm flatbread.

- 2 lbs bone-in chicken pieces
- 2 tbsp Jamaican curry powder
- 1 tsp allspice
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 sprigs thyme
- 1 Scotch bonnet pepper, chopped (optional)
- 2 potatoes, cubed
- 1 cup coconut milk
- 1 cup chicken broth
- Salt and black pepper to taste
- 2 tbsp oil
Instructions
Season chicken with curry powder, salt, and pepper. Let marinate for at least 30 minutes.
In a pot, heat oil and brown chicken on all sides. Remove and set aside.
Sauté onions, garlic, ginger, and thyme. Add more curry powder if needed.
Return chicken to pot. Add coconut milk, broth, pepper, and potatoes.
Simmer for 30–40 minutes until chicken is tender and sauce thickens.
Serve over rice or with roti.
Notes
- Use boneless thighs for faster cooking. Scotch bonnet adds authentic heat — adjust to taste.
