Description

A spicy, comforting Caribbean classic made with tender chicken, aromatic spices, and rich curry sauce — perfect over rice or with warm flatbread.


Ingredients

  • 2 lbs bone-in chicken pieces
  • 2 tbsp Jamaican curry powder
  • 1 tsp allspice
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 sprigs thyme
  • 1 Scotch bonnet pepper, chopped (optional)
  • 2 potatoes, cubed
  • 1 cup coconut milk
  • 1 cup chicken broth
  • Salt and black pepper to taste
  • 2 tbsp oil

Instructions

  • Season chicken with curry powder, salt, and pepper. Let marinate for at least 30 minutes.

  • In a pot, heat oil and brown chicken on all sides. Remove and set aside.

  • Sauté onions, garlic, ginger, and thyme. Add more curry powder if needed.

  • Return chicken to pot. Add coconut milk, broth, pepper, and potatoes.

  • Simmer for 30–40 minutes until chicken is tender and sauce thickens.

  • Serve over rice or with roti.

Notes

  • Use boneless thighs for faster cooking. Scotch bonnet adds authentic heat — adjust to taste.
